Polpette di fagioli affumicate
Delle frittelle buonissime, ideali per farcire i panini
Ingredienti:
– 300 gr. fagioli cannellini
– 1 cipolla
– 1 cucchiaino di sale affumicato
– una manciata di prezzemolo fresco
– due manciate di spinaci freschi
– 2 cucchiai di farina di ceci oppure maizena
– 1 cucchiaio di salsa di soia
– 1 cucchiaio di paprica affumicata
Grattugia la cipolla finemente. In un frullatore metti tutti gli ingredienti e frulla fino ad ottenere un composto morbido, ma non appiccicoso. Se ti risulta troppo morbido aggiungi un pizzico di farina di ceci o maizena.
Lascia riposare il composto per almeno 30 minuti in frigorifero prima di formare le tue polpette e cuocerle in un filo d’olio d’oliva oppure in un goccio di brodo (giusto per non farle attaccare). Se lo desideri puoi anche cuocere le polpette in forno a 180° per circa 20 minuti girandole a metà cottura.

Ingredients:
– 300 gr. cannellini beans
– 1 onion
– 1 teaspoon of smoked salt
– a handful of fresh parsley
– two handfuls of fresh spinach
– 2 tablespoons chickpea flour or cornstarch
– 1 tablespoon of soy sauce
– 1 tablespoon of smoked paprika
Grate the onion finely. In a blender put all the ingredients and blend until a soft, but not sticky, mixture is obtained. If it is too soft, add a pinch of chickpea or corn flour.
Leave the mixture to rest for at least 30 minutes in the refrigerator before forming your balls and cook them in a drizzle of olive oil or in a dash of broth (just to prevent them from sticking). If you wish you can also bake the balls in the oven at 180 degrees for about 20 minutes turning them halfway through cooking.
